The health benefits of carotenoids

Functional foods are formed by chemical compounds that have metabolic effects and act in the prevention and fight of diseases. Among these natural compounds, carotenoids can be highlighted as relevant in the diet, in view of the benefits presented by their consumption. It is important to emphasize that carotenoids play an important role in human health, in view of their antioxidant and anti-inflammatory properties, as well as helping to prevent some chronic diseases. Theoretically, the study allows the explanation of the concepts linked to the theme, through authors who support and ratify those described. In this way, it directly contributes to the application of studies related to functional foods and their compounds. This article presents a narrative review through bibliographic research as a methodological procedure. It is worth mentioning that carotenoid compounds are not only used for the intensification and coloring of foods, because, in addition to the food industry, their use can be extended to the pharmaceutical and nutraceutical industry. For these industries, their compounds are mainly used in cosmetic formulas, exploring their potential nutritional and antioxidant properties. It is also expected that the research results will contribute to the dissemination of knowledge about food and its benefits, so that there is a greater understanding of how they can be used for a specific purpose, mainly as a way of combating or preventing diseases.
