Embalagens ativas antioxidantes: uma estratégia para a conservação de alimentos com alto teor lipídico

Resumo

As embalagens bioativas com ação antioxidante auxiliam na manutenção das características sensoriais e nutricionais dos alimentos ricos em lipídios. Essa revisão apresenta estudos do emprego dessas embalagens com objetivo de minimizar as perdas e estender a vida útil destes produtos. Diversos compostos com ação antioxidante podem ser utilizados para este fim, dentre eles, a utilização de compostos naturais (extratos de plantas e óleos essenciais) tem emergido como alternativa para o atendimento dos anseios dos consumidores. Estudos têm demostrado interessante prospecção para aplicação das embalagens ativas antioxidantes visando a manutenção da qualidade destes alimentos. Uma nova tendência também se destaca no contexto do desenvolvimento sustentável, com a produção de embalagens ativas a partir de polímeros bio-based. Todavia, urge-se a necessidade de mais estudos referentes a este assunto visando a produção de embalagens com adequadas propriedades tecno-funcionais, mecânicas e térmicas para produção em escala industrial visando a substituição das embalagens convencionais.
