Ultrasound-assisted extraction and characterization of bioactive compounds from ‘Rosa’ mango (Mangifera indica L.) pomac

Abstract

The generation of agro-industrial residues from the processing of tropical fruits has increased, representing an environmental and economic challenge. This study aimed to evaluate the potential valorization of ‘Rosa’ mango pomace as a source of bioactive compounds through the application of different extraction methods and the physicochemical and bioactive characterization of the obtained extract. Samples were processed at the Agroindustrial Processes Laboratory of Embrapa Agroindústria Tropical, where mangoes were peeled, ground, and filtered, and the resulting pomace was used as raw material. The ultrasound-assisted extract was selected for analysis due to its higher color intensity. Physicochemical parameters, including pH, total titratable acidity, and total soluble solids, were determined, as well as the quantification of yellow flavonoids, anthocyanins, and vitamin C using spectrophotometric methods. The extract showed an acidic pH (4.36), low titratable acidity (0.08 g citric acid/100 g), and low total soluble solids content (4.2 °Brix), characteristics compatible with diluted mango-derived products. The presence of yellow flavonoids (7.05 mg/100 g) and anthocyanins (0.54) indicated the extraction of phenolic compounds with antioxidant potential. Vitamin C content was low (0.365 mg/100 g), possibly due to dilution and the sensitivity of ascorbic acid to the extraction process. It is concluded that ‘Rosa’ mango pomace presents potential for valorization as a source of bioactive compounds, demonstrating feasibility for the sustainable reuse of agro-industrial residues and value addition to mango processing by-products within agroindustrial chains.
