Envases antioxidantes: una estrategia para la conservación de alimentos con alto contenido en lípidos

Resumen

Los envases bioactivos con acción antioxidante ayudan a mantener las características sensoriales y nutricionales de los alimentos ricos en lípidos. Esta revisión presenta estudios sobre el uso de estos envases con el fin de minimizar las pérdidas y extender la vida útil de estos productos. Varios compuestos con acción antioxidante pueden ser utilizados para este fin, entre ellos, el uso de compuestos naturales (extractos de plantas y aceites esenciales) ha surgido como una potencial alternativa para satisfacer los deseos de los consumidores. Los estudios han mostrado una perspectiva interesante para la aplicación de envases antioxidantes activos para mantener la calidad de estos alimentos. También se destaca una nueva tendencia en el contexto del desarrollo sostenible, con la producción de envases activos a partir de polímeros bio-based. Sin embargo, existe una necesidad urgente de más estudios sobre este tema con el objetivo de producir envases con propiedades tecno funcionales, mecánicas y térmicas adecuadas para la producción a escala industrial con el fin de reemplazar los envases convencionales.
