Objective: to determine nitrite and nitrate concentrations in different infant milk formulas marketed in the Vale do Taquari region, Rio Grande do Sul, Brazil. Methodology: this is an experimental, quantitative analytical study, carried out with 4 brands of milk formulas for infants up to the sixth month of age, collected in commercial establishments in the Vale do Taquari Region, RS, in June 2017. They were analyzed the nitrite and nitrate contents of two samples from different lots of each brand, in triplicate, totaling 24 samples. The data were analyzed using the Statistical Package for the Social Sciences software version 22.0, using the t-student test and ANOVA, where the maximum significance level adopted was 5%. Results: it was found that, for the nitrate concentration, the averages found between the studied brands showed a significant difference (p≤0.01), while the nitrite averages did not present a significant difference between the marks (p≤0.174). Conclusion: the analyzed formulas offer minimal risk of diseases related to the nitrate/nitrite content, although controls in the manufacturing process are essential to ensure the safety of these foods.
