Riesgos de interrupción en la cadena de suministro de açaí desde la perspectiva de los gestores del Estado de Pará

Resumen

La creciente demanda de alimentos hace del agronegocio un sector poderoso en la economía brasileña y mundial, pero a pesar de este vigoroso crecimiento a lo largo de los años, la cadena de suministro del agronegocio se enfrenta a constantes riesgos de ruptura, debido a los desafíos inherentes a la cultura alimentaria y a la fruticultura. El objetivo de esta investigación fue identificar y describir los principales riesgos de ruptura en la cadena de suministro de açaí, desde la perspectiva de los gerentes de empresas del Estado de Pará que trabajan en la extracción, procesamiento, comercialización y apoyo a los gerentes de empresas que trabajan con açaí. El enfoque metodológico utilizado fue la investigación cualitativa, utilizando estudios de casos múltiples mediante entrevistas semiestructuradas. Como resultado, esta investigación desarrolló un marco compuesto por 22 riesgos de ruptura en la cadena de suministro de alimentos, consolidados en 13 grupos. El análisis de evidencias demostró una alta vulnerabilidad en la cadena de suministro del açaí, ya que todos los riesgos mapeados son aplicables a la cadena del açaí, con la excepción del riesgo relacionado con el uso de antibióticos/agroquímico, y de la demanda. También se pudo identificar que los gestores son conscientes de la vulnerabilidad de la cadena de suministro del açaí, pero no utilizan ningún método o proceso de gestión de riesgos.
