Del campo a la industria: Panorama sobre el tomate, los beneficios del licopeno para la salud y la valorización sostenible de subproductos

Resumen

Este estudio tiene como objetivo revisar el conocimiento actual sobre el tomate y los carotenoides, especialmente el licopeno, destacando sus beneficios para la salud y las posibilidades de aprovechamiento sostenible de los subproductos de la industria del procesamiento del tomate. Perteneciente a la familia de las Solanáceas, el tomate (Solanum lycopersicum L.) es una de las hortalizas más consumidas en el mundo, apreciado tanto en su forma fresca como en productos industrializados. La industria del tomate genera un gran volumen de residuos, cuyo manejo inadecuado puede causar problemas ambientales, además de desperdiciar compuestos bioactivos valiosos como el licopeno. El licopeno posee una alta capacidad antioxidante y su consumo se ha asociado con la reducción del riesgo de desarrollar ciertos tipos de cáncer y enfermedades cardiovasculares. Se están explorando métodos innovadores y sostenibles de extracción, como el uso de disolventes ecológicos y tecnologías asistidas por fluidos supercríticos, ultrasonidos y otras técnicas emergentes, para optimizar el aprovechamiento de estos subproductos, contribuyendo a la economía circular y la sostenibilidad. Es necesario que la investigación avance para superar los desafíos actuales y promover soluciones que reduzcan los impactos ambientales negativos, logren una extracción eficiente y sostenible, reduzcan costos y mejoren la escalabilidad de las tecnologías de extracción, con el fin de obtener productos de alto valor agregado para diversas aplicaciones.
