Polvos ricos en fibra de subproductos residuales de frutas tropicales: un estudio bibliográfico de sus compuestos bioactivos

Resumen

Brasil es un país de gran actividad agrícola, lo que resulta en una alta producción de residuos agroindustriales. Estos residuos, en la mayoría de los casos, no tienen aplicación industrial y pueden convertirse en una fuente de contaminación ambiental. Este estudio tiene como objetivo revisar los compuestos bioactivos presentes en los residuos de frutas tropicales y verificar su potencial de uso en la producción de polvos ricos en fibra (PRF). Se utilizó una revisión cualitativa de la literatura como metodología. Los compuestos con efectos beneficiosos para la salud efectivos revisados fueron compuestos fenólicos, carotenoides, vitaminas (C, E y A) y alcaloides (trigonelina y cafeína). Los datos encontrados para el PRF indican buenas propiedades funcionales y alto contenido de compuestos antioxidantes y fibras dietéticas, lo que permite que estos materiales se utilicen en el desarrollo de nuevos productos. Además, encontramos que hay pocos estudios que aborden la bioaccesibilidad de los polvos producidos a partir de residuos de frutas tropicales, lo que confirma la necesidad de realizar más estudios sobre este tema. Hacemos hincapié en que, además de los beneficios para la salud, la producción de polvos ricos en fibra es una alternativa importante para reducir los impactos en el medio ambiente debido a la eliminación incorrecta de los residuos agroindustriales.
