Anormalidades musculares emergentes no músculo Pectoralis major de frangos de corte – revisão

O objetivo desta revisão de literatura foi abordar as características qualitativas da carne, químicas e morfológica das fibras musculares das principais miopatias (miopatía peitoral profunda - MPP, white striping - WS, wooden breast -WB e spaghetti meat - SM) verificadas na linha de abate de frangos de corte nos últimos anos. A ocorrência dessas anormalidades no músculo do peito (Pectoralis major), atrelado com a taxa de crescimento acelerado e o alto rendimento de peito, é uma preocupação emergente para a industria avícola e demanda de estratégias que viabilizem o sistema de produção para amenizar as perdas econômicas provenientes das condenações das carcaças ou pela rejeição dos consumidores. Portanto, o principal desafio é diminuir o surgimento dessas lesões musculares mas sem prejudicar os índices produtivos e qualitativos da carne, tendo em vista que é uma das principais causas que diminuem a qualidade da carne de peito com potencial de impactar a escolha do consumidor final.
