Resíduo agroindustrial de soro de leite como solvente ecologicamente correto na elaboração de filme hidrocoloidal biopoliméricos: estudo das propriedades ópticas

Resumo

O desenvolvimento de embalagens ecofriendly, utilizando fontes renováveis com ciclo de vida curto, como o amido e a quitosana, ganham destaque em pesquisas como inovação tecnológica. No mesmo sentido, o soro de leite líquido (resíduo de agroindústria láctea) como comportamento de solvente (agente dispersante) na obtenção de filmes flexíveis. O presente trabalho objetivou desenvolver filmes da blenda de amido com diferentes concentrações de quitosana, solubilizado em soro de leite líquido pelo método casting descontínuo. Os filmes foram caracterizados quanto às propriedades ópticas (colorimetria, opacidade e transparência) e barreira à radiação ultravioleta (UV). Todos os filmes das blendas apresentaram diferença total de coloração (ΔE) visível em todos os tratamentos, ΔE >12. Assim como, boa propriedade de barreira à radiação de luz UV. O tratamento com 25% (m/m) de quitosana apresentou maior barreira à luz UV (200 a 315 nm), região de maior suscetibilidade a reações de oxidação lipídica em alimentos. Logo, o soro de leite apresentou uma ação dispersante de solvente na formação dos filmes biopoliméricos. Assim, os filmes hidrocoloidais demonstraram forte potencial tecnológico para uso e aplicação como embalagens ecofriendly para fins de aplicação em produtos lácteos ricos em compostos foto-oxidativos.
